Inspired by the traditional Thai snack thong muan (meaning “rolled gold”), Trader Joe’s Coconut Crispy Rolls are a textbook example of how texture can turn a good snack into a great one. Each Roll is made from several layers of super thin, super flaky wafer cookie, which in turn is made from six simple ingredients: coconut milk, sugar, tapioca starch, eggs, black sesame seeds, and sea salt. These layers are rolled, layer upon layer, into a thin tube, creating a phenomenally flaky texture with an exhileratingly crisp, toothsome crunch.
While the slight mix of sweet and savory (courtesy of the black sesame seeds and salt) and preponderance of coconut flavor (our supplier uses only fresh coconut milk, which they extract themselves, daily) would be enough to make this an excellent snack, it’s the texture that sends this over the top. Biting into each Coconut Roll releases an infectiously joyous crunching sound, and as those thin layers break apart, their extra surface area enhances the coconut-sesame flavors immensely.
