Tieguanyin Oolong Tea, or Iron Goddess of Mercy is an Oolong tea that has a fruitier flavor than other Oolong tea. Legends state that the origins of the oolong tea may have come from a poor farmer who would pass by the deteriorating temple of Bodhisattva of Compassion, Guanyin, and would stop by to do his best to maintain the temple. One day, the Goddess came to him in a dream and let him know of a treasure in the cave behind the temple. The poor farmer went to this cave and discovered the tea that he then shared with his neighbors and named after the Goddess. This tea brought prosperity to the area and to the temple, hence it’s named as Tieguanyin, or Iron Goddess of Mercy. The tea leaves are first picked, dried in the sun, cooled, tossed, oxidized, fixed, rolled and then dried in an 8 step process to yield its true and unmistakable flavor.
